Oyster farming has over 300 years of history in Taiwan. The most famous oyster farming area is Wang Kong, a fishing town in Changhua County, where a vast stretch of tidal land is particularly suitable for oyster farming. Oysters from Wang Kong are smaller than those from other farming areas, but they are tender and more delicious, for which they are fondly named “pearl oyster”. Despite technological progress in the art of oyster farming, oyster farmers have to endure hot sun in the summer and cold seawater in the winter. Oyster farming is still a harsh job. So, friends, whenever we enjoy a delicious oyster dinner, we should remember “every single piece is a fruit of hard work”.
